Description: Paprika comes from an annual plant native to South America, which is now cultivated worldwide and it can become perennial where no frost occurs that reaches a height of 1 metre. The leaves are alternate, simple, ovate, and glossy, mid to deep green in colour and 5-12cm in length. The 5-6 petaled flowers are white to pale purple in colour, 8–15mm in diameter and solitary. The fruits look like berries and are 1-2cm in diameter, bright green turning to red as the fruit ripens.
Interesting Fact: Did you know that sweet paprika is made from the same plant as hot paprika? Its all down to the way the fruits are processed, sweet paprika is made mostly from the flesh of the fruit with over half of its seeds removed. The seeds are what give the spice the heat we’re familiar with in other paprikas. Hotter paprikas contain more of the parts of the plant (seeds, placentas, calyxes, and stalks) that contains capsaicin, the heat giving chemical in this family of plants; the flesh contains less capsaicin that all the other parts. This process was discovered by the Hungarian Palfy brothers in the 19th century, who discovered that by removing the stalks and seeds from the peppers before processing, the resulting paprika was much sweeter in flavour with less heat.
