Description: Hyssop is a perennial evergreen, low growing shrubby herb, growing to a height of up to 0.60 metres, native to Southern Europe; hyssop can also be found growing in the Mediterranean. It has a square stem like other members of the Lamiaceae (mint) family; the leaves are dark green in colour, aromatic and linear. The flowers grow in clusters and are double-lipped, blue in colour, in some varieties white or pink.

SUGGESTED USEHyssop was one of the herbs favoured by the Elizabethan’s as a strewing herb; it was seen to be a disinfecting and purifying herb. The dried leaves can be added to soups, stuffings and sauces, they also make a pleasant mildly minty tisane, the leaves and flowers can also be added to pot pourri. The oil is used in the perfume industry and is much valued. The dried plant can also be used to make a fungicidal spray to control garden pests.
